If you've never booked a private hibachi chef before, you might have a lot of questions. What happens after you book? What does the chef actually do? What do you need to have ready? This guide walks you through the entire experience so you know exactly what to expect.
After You Book
Once you submit your booking, we'll confirm your date, location, and guest count. We'll also discuss:
- Your protein preferences and any dietary restrictions
- Whether you want any premium upgrades (filet mignon, lobster)
- Any add-ons like gyoza or edamame for the group
- Your setup space — we'll advise on the best layout
You'll receive a confirmation with all the details. For large events like weddings or parties over 50 guests, we'll also coordinate the number of chefs and grills needed.
Day of the Event: Setup
Your chef arrives ~15 minutes before your scheduled start time to set up. They'll bring:
- The hibachi grill and all cooking equipment
- Fresh proteins, vegetables, rice, and sauces
- Seasonings and cooking supplies
- Serving equipment
You should have your guests seated around the grill area before the chef starts cooking. The typical setup is a semicircle or U-shape so everyone has a clear view of the grill.
The Performance
This is the part that surprises first-timers the most. A private hibachi chef isn't just cooking — they're performing. Expect:
- The onion volcano: Stacked onion rings set on fire to create a flaming tower. A classic that gets a reaction every time.
- Fire tornadoes: Chef spins the flames into a rotating column. Kids go absolutely wild for this.
- Knife skills: Rapid chopping, tossing, and slicing that looks effortlessly precise.
- Food tricks: Tossing shrimp tails into the chef's hat, flipping pieces of food onto guests' plates or directly into their mouths — always a crowd moment.
- Interaction with guests: Good hibachi chefs involve the guests — asking questions, making jokes, turning it into a shared experience.
The Food
Everything is cooked fresh right in front of your guests. Each adult gets:
- 2 proteins of their choice (chicken, steak, shrimp, salmon, scallops, or tofu)
- Hibachi fried rice
- Hibachi vegetables
- Garden salad
- Yum yum sauce, ginger sauce, and teriyaki
Children (12 and under) get 1 protein. If you've ordered premium upgrades like filet mignon or lobster, the chef incorporates those for the specified guests.
Food is served hot, plated directly from the grill. Unlike a buffet where food sits under a lamp, hibachi is cooked and served immediately — it's as fresh as it gets.
How Long Does It Take?
For most parties of 10–25 guests, the full cooking experience runs about 90 minutes. For larger groups, it may run slightly longer. The chef works through courses — salad first, then the proteins and rice — keeping up a steady rhythm of performance and serving.
What You Need to Provide
We handle everything on the cooking and entertainment side. You provide:
- Seating for all guests around the grill
- Plates, napkins, and utensils
- Drinks and anything else you want to serve
- A flat, stable space for the grill setup (~10×10 ft per station)
Gratuity
Gratuity is not included in the quoted price. Our chefs work hard — cooking, performing, and keeping your guests entertained for over an hour. Most customers tip 15–20% of the food total. It's always appreciated.
